Summer Pasta Salad Recipe

This recipe is perfect for a hot summer day! It combines fresh vegetables with a healthy and refreshing dressing that fits any occasion.

Equipment

  • 1 Large bowl
  • 1 Cutting Board

Ingredients

  • 1 Red Onion If you get heartburn easily, I recommend sautéing the red onion in a pan before adding it to the salad
  • 1 Cucumber
  • (To taste) Cilantro I recommend about a handful
  • 2 Celery Staulks
  • 1 Bell Pepper
  • 3 Campari tomatoes Or one large tomato (adjust to taste)
  • 2 Cups Rotini Pasta Sub with quinoa if needed (gluten free option)

Dressing

  • 1/4 Cup Greek Yogurt Sub with coconut based yogurt if needed (dairy free option)
  • 3 Tbsp Olive oil
  • 1/4 Tsp Pepper
  • 1 Tbsp Lemon juice
  • 1 Tsp Salt
  • 1 Tsp Garlic
  • 1 Tsp Dried Dill
  • 1/4 Tsp Onion Powder
  • 1 Tsp Dried Parsley
  • 1 Tsp Dijon Mustard

Instructions

  • Cut Vegetables to liking
  • (Optional) Sauté red onion
  • Mix dressing ingredients together
  • Combine all ingredients into large bowl and mix
