Summer Pasta Salad Recipe
This recipe is perfect for a hot summer day! It combines fresh vegetables with a healthy and refreshing dressing that fits any occasion.

1 Large bowl
1 Cutting Board
- 1 Red Onion If you get heartburn easily, I recommend sautéing the red onion in a pan before adding it to the salad
- 1 Cucumber
- (To taste) Cilantro I recommend about a handful
- 2 Celery Staulks
- 1 Bell Pepper
- 3 Campari tomatoes Or one large tomato (adjust to taste)
- 2 Cups Rotini Pasta Sub with quinoa if needed (gluten free option)
Dressing
- 1/4 Cup Greek Yogurt Sub with coconut based yogurt if needed (dairy free option)
- 3 Tbsp Olive oil
- 1/4 Tsp Pepper
- 1 Tbsp Lemon juice
- 1 Tsp Salt
- 1 Tsp Garlic
- 1 Tsp Dried Dill
- 1/4 Tsp Onion Powder
- 1 Tsp Dried Parsley
- 1 Tsp Dijon Mustard
Cut Vegetables to liking
(Optional) Sauté red onion
Mix dressing ingredients together
Combine all ingredients into large bowl and mix
